Pop-Ups on the Bay

Your one-stop (pop-up) shop for a day of outdoor activity and delicious bites.

Did someone say pop-ups? These new riverside shops are yet another reason to plan a day in the Bay of Quinte. You can rent bicycles and enjoy the beautiful trails along the water, and then work up an appetite for some delicious wood-fired pizza and cold treats.

To turn up the excitement, we had a quick chat with the entrepreneurs participating in the Pop-Ups on the Bay at West Riverside Park.

1) Tell us about your business.

Brick Oven Pizza Truck is a brand new mobile food truck that combines the old Italian pizza making traditions with new-age technology.  We started this business out of love for pizza! We felt there was room in the local market for a pizza service that can produce delicious fire-cooked pizzas in only a few minutes. We want our pizza to be convenient, fast and delicious!

2) What can people expect from your pop-up?

People can expect a fun environment at our new and cool pizza truck! We are launching with the pizza basics: 12” pizzas and some mini pizzas, but we will quickly expand to some other foods as well in the future. We need to get comfortable in our tiny kitchen space first before we expand our menu– but we are certainly focused on the pizza!

3) Why are you interested in being a part of the pop-ups project? 

Well, we think our truck is pretty cool and so we needed an equally cool place to set up! Pop-Ups on the Bay seemed to be the perfect fit and we wanted to be a part of making the whole project a success. We were particularly excited to be a part of the solution for driving more traffic to our under-utilized waterfront properties. We look forward to the growth of the Pop-Ups over the next few years. Assuming Brick Oven continues to be a part of this project, we’ll look at outfitting a shipping container to cook and serve pizzas from for next year.

4) What makes the pop-up format a good fit for your business?

Our pizza truck is new, cool and exciting and the Pop-Ups are new, cool and exciting–it was a natural fit!

1) Tell us about your business.

Doug’s Bicycle was founded in 1978 and has been the Quinte area’s source for top-quality bikes, parts and service for over 40 years now. The shop is now owned by passionate young cyclists, Tyler Allsopp and Derek Kulker, who are both carrying on the community tradition of the business, modernizing its operations and pushing the boundaries of what it means to be a small town bike shop. We offer bikes and products from the cycling industry’s top brands including Giant, Specialized, Cervelo, Santa Cruz and Norco. We also provide world-class Retul bike fitting and a full array of shop services to get your bike running at its best!

2) What can people expect from your pop-up?

Our pop-up will facilitate a new aspect of our business: bike rentals! We are very excited to be offering a selection of hybrid cruiser bikes, BMX bikes, hardtail mountain bikes and several premium road bike rentals. We believe that these services will greatly benefit the usability and traffic flow to Riverside Park as well as enhancing the enjoyment of our beautiful waterfront by making it more accessible.

3) Why are you interested in being a part of the pop-ups project? 

The Pop-Up Project represented a unique opportunity to expand our business into bike rentals, as well as helping the Bay of Quinte area tourism in a manageable and cost-efficient way. We also value the clustering of other pop-up businesses and see this as being a great way to promote an ecosystem of related businesses. It’s a great way to provide a complete experience for people coming down to visit the pop-ups and the park.

4) What makes the pop-up format a good fit for your business?

Our business is a great fit for the pop-ups because we can offer high-quality rental bike to tourists and locals alike. Also, the small footprint of the pop-up is ideal for rental business because the bikes will be displayed outside and there will be very minimal retail services being offered that require floor space. It is a great fit for us, a great fit for the community and we are hoping that this summer is going to be a home run for everyone involved!

The Golden Scoop

1) Tell us about your business.

The idea stemmed from growing up on a family dairy farm in Corbyville and years of being an athlete: a passion for local Canadian-made dairy products, and providing ways for athletes to achieve their goals through community involvement, nutrition and strength. Naturally, combining those two passions led to starting The Golden Scoop and its local and healthy products.

2) What can people expect from your pop-up?

People can expect Canadian-made and locally-produced ice cream along with Biosteel Freezies for those who are active and may require an energy boost during their visit to the waterfront. Visitors can also expect a welcoming presence from the employees, who are athletes from Gold Performance Training. The employees working at the pop-up are athletes that unable to work full-time summer jobs due to their commitments with their training and sport.

There is also another sweet bonus: you will find dairy farm colouring pages for the children with purchase. This is an effort to make the little ones smile and to promote the importance of local, Canadian-made dairy products.

3) Why are you interested in being a part of the pop-ups project? 

It’s a unique and exciting opportunity. I grew up spending plenty of time by the water; I think it’s a great way to exercise outside, spend time with your family and friends and appreciate the beauty of the Bay. Also, all of the pop-ups complement each other: with bicycle rentals and food, refreshing products after a long day in the sun was a perfect fit to the project.

4) What makes the pop-up format a good fit for your business?

The pop-up format is a great fit for The Golden Scoop because we are able to extend our goal for offering healthy, refreshing and local products to people outside of the athletic market. It is an opportunity to promote healthy living to locals and tourists, in addition to shining a light on locally-made dairy products.
